Smoked Baby Back Ribs

 New smoker, charcoal and wood chips.

 Soak wood chips for about two hours before you begin.
|
 Rub ribs on meat side only and let them sit out for 30 minutes.
|
|
 Start charcoal and allow to burn 20-25 minutes, or until charcoals turn white.
|
 Pour charcoal into smoker, place ribs on rack, and add pre-soaked smoked chips and close lid.
|
 Add smoked wood every hour or so as needed.
|
|
 Smoke ribs for about 4 hours, and until they reach 160°. Wrap in foil and bake in oven at 350° for 30 minutes for jucier ribs.
|
 Cajun, Mesquite and Sweet & Spicy ribs.
|
 Cut and enjoy!
