Bisquick Chicken Pot Pie

We were running low on dinner supplies tonight, and didn't want to go out to the store. We always have Bisquick on hand for pancakes on the weekend, so we Googled some recipes online. This chicken pot pie recipe uses ingredients we almost always have in the pantry. We actually used canned chicken breast from Costco because we didn't have chicken defrosted, and it was still delicious. (We will cook the chicken next time.) This was so easy to make, and done in 30 minutes once it's in the oven. This will definitely be a "go-to" recipe for busy nights!

What You Need (makes about 6 servings)

  • 1 cup cooked chicken, cut into bite sized pieces
  • 1 2/3 cups frozen vegetables, thawed
  • 1 (10 ounce) can cream of chicken soup
  • 1 cup Bisquick baking mix
  • 1/2 cup milk
  • 1 egg
Make It

  1. Preheat oven to 400°F.
  2. Mix chicken, veggies and cream of chicken soup together and spread into bottom of non greased 9-inch round glass pie pan.
  3. Mix remaining ingredients (Bisquick, milk and egg) and pour on top of chicken mixture.
  4. Bake in oven for 30 minutes or until top turns golden brown.
