Dave's Own Meatloaf

This is Dave's own meatloaf recipe. He has made it several times and it is great! We like it spicy, but you can put less jalapenos and skip the jalapeno juice if you choose.

You will need:

  • 1 lb. lean ground beef
  • 1 lb. ground sausage (we chose spicy)
  • 2 eggs
  • ¼ cup diced jalapenos & 1 tbs. jalapeno juice
  • 1 ½ cups bread crumbs
  • 1 cup salsa
  • 1 cup diced onion (optional)
  • ¼ cup Mexican shreded cheese blend
  • 2 thinly cut slices of Pepper Jack cheese (optional)
  • Salt & Pepper
  • BBQ Sauce

Preheat oven to 375°. Season ground beef with salt and pepper. (Roughly 1 tsp. each or less according to taste.) Mix seasoned ground beef with sausage. Mix meat with 2 eggs, salsa, diced jalapenos, jalapeno juice, onions (if used) and cheese. Mix in bread crumbs.

press meat mixture into nonstick loaf pan. Baste top with KC Masterpiece BBQ Sauce (or other brand). Add thin strips of Pepper Jack cheese, if desired. Baste again with BBQ sauce after about 45 mins. Bake at 375° for 1 hour and 15 minutes, or until internal temp. reaches 160°. Let cool for about 5 minutes before serving.

Tri-Tip Roast
Ingredients

If you are using onions, saute them in a little butter before adding.
Pepper Jack cheese
Place ground beef in bowl.

Add ingredients to ground beef.

Mix well.
Pepper Jack cheese
Press ground beef into baking pan.
 
Tri-Tip Roast
Add strips of Pepper Jack cheese (optional)

Baste with lots of BBQ sauce.
Pepper Jack cheese
Bake at 375°.
